Welcome back friends! It’s been a whirlwind of fun over here in our neck of the woods! Lot’s of learning, lot’s of learning growth, both inside and outside of school. The school year is ending (the craziest I think we’ve all endured), graduations, the start of summer vacation, all the fun stuff. I hope you all are excited for summer as well!

What’s for dinner?
It has been a crazy, hectic, restless week. We are officially back in school, and most importantly, we’re in back to school MODE. This essentially means that everything gets pushed to the weekend, dishes pile up constantly in the kitchen because we’re exhausted by the time we get home, and we’re falling asleep by 8:15 PM. This usually happens in the first few weeks until we finally find our groove again (and our caffeine fixes). Back to school mode is no joke, and neither is the monumental whirlwind of realizing that there are never enough hours in a day to finish everything you need to.
So what’s the hardest thing to do when you get home after a long day of work?…. cook. That’s the hardest thing for us to do the first couple weeks back because it’s just one thing on top of another it seems like. So this week on the blog, we’re giving ourselves a grace period, and finding dinners that are simple, fast, and (somewhat healthy)… like I said a grace period.
We thought it was a great time to put some of these recipes up for you guys because we’re all struggling with the same thing! This time of year definitely kicks all of us into overdrive. Here are some recipes we’ve tried and found useful for those days where you really just don’t want to cook. How is it already August? Summer went by in a flash, and everyone’s already gearing up for fall (except for the weather in SoCal, it’ll probably still feel like summer until December). This time of year feels like everyone’s in limbo, because it’s too early to celebrate any holidays,it’s hard to figure out what to wear, and the weather is awkward; it’s chilly in the morning and 90 degrees in the afternoon. Even though this is a weird season for everyone, we still have to remember to be in the moment as much as we can, and enjoy these next couple months, especially with the new school year just around the corner.
There are many ways to stay present with your goals during this funky time. The ways I help myself stay on track are eating healthy even when I’m crunched on time, making time for my hobbies or things I enjoy doing, and having fun on the weekends where I can take my mind off of work (kind of). Staying healthy physically and mentally is one of the biggest challenges for me when I’m busy running all over the place! I know many of us struggle with this, and we’re all trying to figure out what works best for our own schedules! Here are some things that I do to try to stay on track:

Hello teacher friends-
Summer’s coming to an end which is bittersweet, however, it’ll be back around the corner before we know it! I’m excited for the new seasons up ahead, especially the crazy back to school season! Back to school season gives every teacher a chance to rebuild their classroom and put together lessons for a new group of students. Forming connections with teachers, parents, students, and staff members helps make what my husband and I do feel more like fun rather than a tedious job. Another part of teaching and getting back to school ready that I thoroughly enjoy is putting together themes for my classroom and helping other teachers set up theirs as well. Here are the top ten themes I’ve found circulating online and within my own teaching community that are super popular for this years back to school season:
